The most precious and expensive spice in the world. Saffron. The saffron filament, Or threads, are actually the dried stigmas of the saffron flower,’’ Crocus sativus Linnaeus ‘’. Each flower only three stigmas .These threads must be picked from each flower by hand , and more than 75,000 of these flower are needed to produce just one pound of saffron filament , making it the world’s most precious spice .Saffron is used both for its strong , intense flavor and aroma because of saffron ‘s strong coloring power and intense flavor , It has to be used sparingly . Saffron contains essential oil which are responsible for its therapeutic properties.

Saffron cultivation in the valley dates back to 550 ad, about four centuries earlier than Spain .Saffron is the most high valued , low volume crop , cultivated on kerewa land .The cultivation of this high valued crop is concentrated in Pampore and the adjoining area occupying an area of about 500 hectares with an estimated annual production of 173 quintals .The industry generates an income of Rs.30 to 40 cores annually.

Tourism department Kashmir is organizing saffron festival in Pampore from 29th 31st October , 2013 to celebrate the arrival and harvesting of this precious crop .The event focuses on the vibrancy of the saffron field amidst colorful festivities that add charm to the magnificent saffron fields’
